Is it possible to configure DisclaimIT to put signature text into a calendar or meeting email that is sent to someone?

yes, but you must configure it: You can enable it as default setting, affecting all placement policies which are configured to use the default setting, or you can enable it on a per placement policy basis.

As default setting: Go into the properties of the Configuration object and select there the Message Classes property page. There enable the setting Meeting requests/responses.
Per placement policy: Go into the properties of a placement policy object and select there the Message Classes property page. There disable (if enabled) the setting Use defaults and enable the setting Meeting requests/responses
